Meet The Chef
Kevin Marsibilio was the executive chef of Marsibilio’s Trattoria in Mayville, WI. Originally from the Hartland, WI area, Kevin and his wife, Michelle, moved to Mayville in 2007, and brought Marsibilio’s with them. Over the 8 years, he successfully guided Marsibilio’s from its humble beginnings as a carry-out pizza place into one of the area’s best, award winning restaurants. The menu focused on local and sustainable products and changed weekly to reflect what was fresh and in season. With no prior restaurant experience or culinary education, Kevin has taught himself the art of cooking and continues to rise to the top of his craft.
Kevin’s heritage is of Italian decent and as a child he learned to make pasta and sauces from scratch from his great-aunt Christie, the matriarch of the family. The family always focused on using the freshest ingredients possible and Kevin continued to do so daily at the restaurant, including having a restaurant garden.
He believes cooking is about creating connections. "As a chef, you create, and those creations help you connect with so many people. You help create experiences and memories with those enjoying your meal, but also with the farmers, growers, and artisans that provided the quality products. Cooking connects communities across generations, ethnicity, and backgrounds. It is one of the oldest ways we have of bringing people together."
Those connection carried over into the community, as both Kevin and Michelle served on many boards and committees including the Mayville Area Chamber of Commerce, Mayville Rotary, Main Street Mayville, MSD Heatlh and Wellness, Dodge County Blue Zones, and the local tourism development committee.
In 2016, Kevin and Michelle moved to Florida with Kevin's son Zachary, who shares his creativity. Kevin is an active member of Rotary International and the former President of Main Street Mayville.
